Step One: Skinning a Rabbit                                      [BACK TO MEAT RABBIT FACTS]

  • Hold/hang the rabbit by the back legs.                          [BACK TO RABBIT FACTS]
  • At the bottom of the ribcage (where the ribs come together) start your cut. be easy. don’t cut into the meat yet
  • Cut down toward the head like you would take off a baby's body suit.
  • Continue your cut down the rabbit's arm (on the inside of the arm). Cut down from the stomach. it is not necessary to save the skin off of the feet. break the legs at the ankles and cut the legs off. You will also need to do this with the front legs, but it can be done later.
  • Stick your fingers inside, between the skin and the meat. Gloves are optional.
  • Pull the skin until you come to the head of the dead rabbit.
  • With the skin separate cut the rabbits head off. Cut the skin from the neck.
  • If you want to keep the coat, drying should start immediately after the skin has been removed. It must cool off quickly and dry out to prevent the action of enzymes in the coat, which attack the hair root and cause the hair to fall out.
   


Step Two: Field Dress a Rabbit

  • Now that you have the skin apart you can gut the rabbit. Like you cut the skin, again start at between the hanging legs and run your knife almost all the way down the ribcage.
  • The insides will immediately fall out. Don’t cut through the stomach or bladder. You will see them inside. What doesn't fall out on its own will need to be pulled out.


Step Three: Prepare Rabbit for Consumption

After you have got all of the guts out set the rabbit on a clean surface (ribcage up) separate the back legs till you can see the hips. Set your knife long ways with the rabbit on the hip bones break/cut through the hips.

Take the knife and cut the rib cage in half long ways (with the length of the rabbit).

Wash the rabbit in cold water to cool the rabbit and clean it.

Then you can cut off the front arms, the back legs, the ribs, and the lower flanks.
